1 large bunch broccoli, cleaned and cut into bite size pieces
8 strips low sodium bacon, cooked (Look for bacon that is 75mg per slice)
½ cup raisins
½ cup red onion, diced thinly
3 to 4 medium sized carrots, peeled and sliced
3 to 4 scallions, diced
Dressing:
1 cup plain Greek yogurt
3 cloves garlic, minced
1 tablespoon sugar
2 tablespoons apple cider vinegar

This Broccoli Salad is a quick summer salad that everyone always loves! Fresh and colorful broccoli, dried raisins, scallion, shredded carrots, and bacon bits 🥓(yes bacon) are tossed in a creamy homemade dressing.
This is the perfect potluck dish and great to serve alongside something off the grill. This broccoli salad is so incredibly easy to make and my kids love it almost as much as I do. Serve it up at your next barbecue and welcome in the summer.
Step 1
Cut broccoli into small pieces and add to a mixing bowl.
Step 2
Break up the cooked bacon and add to broccoli.
Step 3
Add raisins, red onion and scallion and set aside.
Step 4
For dressing, mix in a separate bowl mayonnaise, yogurt, garlic, sugar and vinegar and whisk together. Add dressing to broccoli and refrigerate for several hours.
Optional topping: Toast some slivered almonds and add on top when serving.
