My favorite lunch is an all-in-one salad but without the boring old lettuce. What I really enjoy is all the toppings, which is why I call this salad “All the Good Stuff”. I try to hit all of the food groups (carbs, protein, and fat), plus all of the major textures, like crunchy seeds and veggies, creamy cheese or roasted vegetables. The more flavor variety, the better! The more diversity I can get into my bowl, the healthier and more satisfied I feel. Some great topping ideas:
Cucumber, radish, carrot, green bean, tomato, mozzarella cheese, blue cheese crumbles, sunflower seeds, wasabi balls, crasins, dates, hard boiled egg, bee pollen, basil, mint, hummus.
