When I can't get around to making it that day, I throw the bananas in the freezer until I am ready to bake. Homemade Baked Everything Bagels…yup I said BAGEL! Being on a low sodium diet you might have thought your days of biting into an extra chewy and golden brown crusty bagel was over, think again! The typical plain bagel on average has almost 500mg of sodium! That the definition of insanity!
I do enjoy a bagel and realized I am one of the pickiest bagel people I know. When I was pregnant and sick (with Hyperemesis gravidarum) with my two kids, all I literally could muster to eat for 9 months was a bagel. So that inspired me to create a homemade bagel that was easy and low salt but most of all tasted AMAZING!
Apple Cider Donuts
Apple Cider Donuts 🍎 remind me of growing up in New England. Every fall we used to go pick apples at Rose’s Berry Farm and always come straight home and make apple sauce, apple pie, apple anything! So I decided to make my own…low salt of course. Cakey and dense, intensely flavored, baked not fried. The one thing about donuts that usually deters me from having them all the time is THEY FRY THEM! So I came up with an alternative solution and decided to bake them and take some of the guilt away. Warm and dipped in cinnamon sugar, this fall treat will become your new favorite too. Share a batch with friends and family who appreciate a hot, fresh apple cider donut. It’s worth the calories just not all the salt.
P.S. Did I mention they were gluten free? Since my 4 year old was diagnosed with Celiac Disease in September our house is 95% wheat free! I don’t even taste the difference!
My Daughter's 3rd Birthday...Bittersweet!
We celebrated our daughter Aisling's third birthday last week, how is she already 3!? We decided to have the birthday bash at the local ice cream shop here in Nola. Why not feed 20 kids with a whole lot of sugar, ice cream sundaes and cupcakes at 11am? Then send them off on their merry way with their parents 🙂
Since Aisling was almost a Mardi Gras baby (meaning she was almost born on actual Mardi Gras day 3 years ago) we will forever celebrate Aisling and the festivities of Mardi Gras each birthday. I made cupcake ice cream cones with cream cheese frosting and of course had to top each one with a Mardi Gras "baby".
Aisling, may you always be loving, sassy, adventurous and my little girl forever. We love you to Mars and back <3

It’s official… I am in love. For a chocolate lover who wants to partake but not indulge. A tidy combination of pantry staples crafts a dough that embraces the love of chocolate chips. Soooo in other words, this bread is magical and will have you raising your hand. Um, excuse me. This is low sodium? Yes!
It wasn’t until I was pregnant with my second that I would even look at anything chocolate. As soon as I was pregnant with her I literally had to have a piece of decadent chocolate every single day. Now guess what? Low and behold she is officially a chocoholic! I had to come up with a recipe to satisfy my cravings while I was pregnant so I created this chocolate tea bread. This recipe can be made in batch and stored in a plastic zip-lock bag to be pulled out at a moment’s notice for a chocolate urge, holiday or hostess gift!
